ATLAS SIG Gastronomy Meeting – Tradition and Innovation in Gastronomy

Introduction

The relationship between food and tourism has grown ever closer: food has become one of the key element of tourism experience, and tourists have become one of the major market for local and regional cuisine (Hjalager and Richards, 2002; Dodd, 2011; Chang and Mark, 2018). But what is it that tourists seek in regional gastronomy? Is it traditional food, the ‘authentic’, ‘real’ cuisine of a region, or is it increasingly the new, innovative aspects of food and gastronomy?

On the other hand, contemporary global challenges (global warming, energy crisis, conflicts, inflation, poverty, pandemic, etc.) can leave their mark on the evolution and development of the food industry.  What effects can we anticipate in the near future?

The theme of the 2023 Research Group Meeting proposes an approach from the perspective of tradition and innovation in the field of gastronomy. Which approach is best placed to secure the future of regional gastronomy – conservation or innovation considering contemporary global trends?

ATLAS is therefore organising a meeting in Sibiu, Romania in May 2023 to bring together practitioners and academics to consider these issues. We therefore welcome input from those involved in the tourism and gastronomy fields in the form of academic papers or practice viewpoints around the following themes:

  • Links and contrasts between tradition and innovation in gastronomy
  • The attractions of regional gastronomy and food for tourists
  • Synergies and frictions between food, gastronomy, culture and tourism
  • The development of new business models in gastronomy
  • Links between agriculture, food production and tourist consumption
  • The role of events in supporting local food cultures
  • The contribution of the cultural, creative and artistic sectors in developing new food systems
  • Contemporary global challenges and the evolution and development of the food industry

The meeting will include a debate on tradition and innovation in gastronomy, practice and academic paper sessions and regional wine and food tastings. The meeting will be organised along the same lines as the 2014 meeting with the same theme, thus a follow-up approach will be employed and designed to maximise interaction and discussion between participants.

 

Abstract submission

All abstracts will be subjected to review by members of the scientific committee. Acceptance of a submission will be based on: theoretical and empirical significance; methodological soundness; relevance to the theme of the meeting and logical clarity.

The official language of the meeting is English.

Abstracts should indicate background, theoretical/practical implications, methods and/or data sources and indicative findings of the paper. Abstracts should have between 350-500 words. The titles should be no more than 12 words.

Notification of acceptance: February 28, 2023

Registration deadline: April 15, 2023

Event: May 24-27, 2023

Full paper submission: June 30, 2023

Publication details

All abstracts (max. 350 words) will be published in the abstract book. This abstract book will be sent to all registered participants before the event, in PDF format.

Participants are welcome to submit their full papers AFTER the conference. The full paper submission date is the 30th June 2023.

The recommended hotels

Hotel Parc *** – 5 minutes` walk from the college and is in a very beautiful park.

Hotel Golden Tulip **** – 3 minutes’ walk from the college (it has a beautiful, panoramic restaurant, on the top floor. You can see all of Sibiu from above).

Hotel MyContinental *** – 3 minutes’ walk from the faculty, recently renovated.

Hotel Continental Forum **** – 5 minutes’ walk from the faculty and located at the entrance to the Historic Center of Sibiu.

Hotel Imparatul Romanilor **** – 15 minutes’ walk from the faculty, a hotel with a rich history (initially renovated by Nicu Ceausescu before the 1989 Revolution, son of Nicolae Ceausescu). It is in the Big Square of Sibiu.

Hotel Am Ring *** – 15 minutes’ walk to the college, the 19th century furniture skillfully restored, located exactly in the Big Square of Sibiu.

Sibiu has an international airport with flights from various European cities. It can be reached by plane directly from the following cities:

Dortmund, Frankfurt Hahn, Karlsruhe/Baden-Baden, Memmingen/Munich West, Nuremberg, London Luton, Madrid, Billund, Bologna, Brussels Charleroi, Dublin, Liverpool, Milan Malpensa, Venice Treviso, Vienna, Munich.
